Profile of skills and competences

The educated health care cook plays an important role in the field of professional catering, food preparation and meal service.

The health care cook can, based on a comprehensive sensory mindset, independently perform the practical functions associated with the preparation and serving of food and meals in the profes-sional kitchen.

The educated health care cook can combine knowledge of health, sensory, food, nutrition, dietet-ics, hygiene and food safety management as well as environmental and sustainability considera-tions in connection with planning, execution, documentation and quality assessment of the work tasks associated with the preparation of palatable everyday food and varied meals, taking into account the process of production, preventive health and health promotion based on the users’ needs and culinary preferences and in relation to sustainability.

The educated health care cook can plan, structure and carry out ergonomically correct produc-tion of food and meals based on specified economic conditions, taking into account the prepara-tion and serving of food to different user groups, take responsibility for sensory, hygiene and food safety management as well as the quality of the food.

The educated health care cook can use oral and written communication to create a good working environment and promote collaboration with colleagues in the professional kitchen and its users, as well as being flexible and ready for development.
